CHEESECAKE II - Restaurant-style cheesecake
INGREDIENTS (one cheesecake)
CRUST
- 100 g (1 cup)
- flour
- 50 g (¼ cup)
- sugar
- 5 ml (1 tsp)
- lemon rind
- 1.5 ml (¼ tsp)
- vanilla
- (1)
- egg yolk
- 50 g (¼ cup)
- softened butter
CAKE FILLING
- 1 kg (2½ lb)
- cream cheese
- 300 g (1¾ cup)
- sugar
- 20 g (3½ Tbsp)
- flour
- 7 ml (½ Tbsp)
- orange rind
- 7 ml (½ Tbsp)
- lemon rind
- 1.5 ml (¼ tsp)
- vanilla
- (5)
- eggs
- (2)
- egg yolks
- 50 ml (¼ cup)
- cream
PROCEDURE

Mix crust ingredients; press into a baking pan.
Bake 10 minutes at
200°C .

Combine filling ingredients; mix well, and pour into baked crust.

Bake at
225°C
for 10-12 minutes.

Reduce to
100°C
for 1 hour.

easy to moderate.
Time:
30 minutes preparation, 1 hour baking.
