CHEESECAKE II - Restaurant-style cheesecake

INGREDIENTS (one cheesecake)

CRUST

100 g (1 cup)
flour
50 g (¼ cup)
sugar
5 ml (1 tsp)
lemon rind
1.5 ml (¼ tsp)
vanilla

egg yolk
50 g (¼ cup)
softened butter

CAKE FILLING

1 kg (2½ lb)
cream cheese
300 g (1¾ cup)
sugar
20 g (3½ Tbsp)
flour
7 ml (½ Tbsp)
orange rind
7 ml (½ Tbsp)
lemon rind
1.5 ml (¼ tsp)
vanilla

eggs
(2)
egg yolks
50 ml (¼ cup)
cream

PROCEDURE

Mix crust ingredients; press into a baking pan. Bake 10 minutes at 200°C .

Combine filling ingredients; mix well, and pour into baked crust.

Bake at 225°C for 10-12 minutes.
(4)
Reduce to 100°C for 1 hour.

RATING

Difficulty: easy to moderate. Time: 30 minutes preparation, 1 hour baking. Precision: measure the ingredients.
