CARROT RAISIN BARS - Chewy carrot raisin and nut bars

This is from \fIThe Carrot Cookbook\fR, by Audra and Jack Hendrickson. As they say, this recipe is beta-carotene rich. In any case, they are a tasty treat.

BOTTOM LAYER

INGREDIENTS (Serves 4-6)

120 g (½ cup)
butter
100 g (½ cup)
sugar
100 g (1 cup)
flour

TOP LAYER

(2)
eggs
100 g (1 cup)
grated carrots
200 g (1 cup)
brown sugar, packed
250 g (1½ cups)
raisins
50 g (½ cup)
chopped nuts
5 ml (1 tsp)
lemon juice
30 ml (2 Tbsp)
flour
2.5 ml (½ tsp)
baking powder
(dash)
salt

PROCEDURE

Preheat oven to 200°C . Cream together the butter and sugar.

Add the flour and mix well. Form into a ball, then press it down into a uniform layer in a 20-cm square baking pan.

Bake until golden brown (about 15 minutes).

Combine ingredients for top layer, mixing well. When bottom layer is done, pour on top and spread evenly.

Bake for 25 minutes.

NOTES

Ships well for gifts and the like. Doesn't easily break or dry out.
