APPLE-MOLASSES BREAD - A simple, fragrant apple nut raisin bread

I found this recipe on the back of a label for a baking loaf pan. It is easy to make and because of the molasses it is very fragrant while baking.

INGREDIENTS (1 large loaf)

120 g (½ cup)
butter
200 g (1 cup)
sugar

eggs
200 g (2 cups)
all-purpose flour
5 ml (1 tsp)
baking powder
2.5 ml (½ tsp)
salt
2.5 ml (½ tsp)
ground cinnamon
1 ml (¼ tsp)
ground nutmeg
250 ml (1 cup)
applesauce
60 ml (¼ cup)
dark molasses (treacle)
150 g (1 cup)
raisins
75 g (½ cup)
chopped nuts

PROCEDURE

Preheat oven to 175°C .

In a large bowl, cream butter and sugar until light and fluffy.

Add eggs, one at a time, beating well after each addition.

Combine flour, baking powder, salt, cinnamon and nutmeg; set aside. Combine applesauce and molasses.

Add dry ingredients alternately with applesauce mixture to egg mixture. Fold in raisins and nuts.

Pour into a greased 23μ13μ7 cm loaf pan. Bake at 175°C for 1 hour, or until a toothpick inserted into the center comes out clean. Cool 10 minutes, remove from pan and continue cooling on a wire rack.

RATING

Difficulty: easy. Time: 15 minutes preparation, 1 hour baking, 30 minutes cooling. Precision: measure the ingredients.
